Pumpkin Spice Smoothie
What you need:
1/2 cup pumpkin puree
1 date (soaked is best!)
1.5 T ground flax seeds
1/2 cup frozen cauliflower rice
1/2 cup zucchini
1 scoop vanilla protein powder
1/2 tsp pumpkin pie spice
extra pinch of cinnamon
1 cup unsweetened plant-based milk
toppings: chopped walnuts or pecans, grain free cereal or low sugar granola
How you do it:
Throw it all in a blender (make sure high speed!)**
Pour into a bowl with toppings of choice!
Makes 1 serving
**optional but recommended: slice zucchini into thick slices and steam until tender; freeze or use warm (steaming helps make this more digestion friendly!)
