Grain Free Healthy Apple Crisp
Makes many servings!
What You Need:
Filling:
6-7 apples (recommend cortland, honeycrisp or grannysmith!)
1 T arrowroot starch
1 T lemon juice
2 tsp cinnamon
Crumble:
1 cup tiger nut flour
2/3 cup arrowroot starch
1 tsp cinnamon
1 tsp pumpkin pie spice
1/2 tsp ginger
1 T coconut sugar
6T cold ghee (or grass fed butter)
1-2 T almond milk
1/3 cup chopped walnuts
option: 3-4 drops of liquid stevia
How You Do It:
Preheat oven to 375
Wash and chop apples into cubes (you can peel them if you want but I like to leave the skin on for extra fiber!)
Toss in a large bowl with lemon juice, cinnamon and arrowroot starch; add a few drops of liquid stevia here if you like a sweeter dish!
Place into a large round pie dish or 8x8 square casserole dish
In a large bowl, combine flours, spices and sugar; cube the ghee and then add to the flour mix-use your (clean) hands to combine the ghee/flours as if you’re making a biscuit or pie crust -it should be crumbly!
Add almond milk until dough comes together as more of a moist crumble-mix in walnuts
Using your hands layer the crumble all over the apple mixture
Place in the oven for 40-45 minutes or until apples are lightly bubbling
Serve with vegan ice cream or coconut whipped cream!
