Cardamom Peach Crisp

There’s nothing like a fruit crisp in the summer! This is my go-to recipe for an oat-free, grain free crisp..you can easily sub any seasonal fruit you have on hand for the peaches.

Serve with a scoop of organic vanilla ice cream and this baby is a total summer potluck crowd please!

What you need:

Filling:

  • 5 large peaches -diced

  • ½ tsp cinnamon

  • ½ tsp cardamom

  • 1 T lemon juice

  • 1 T arrowroot starch

  • pinch of salt

  • 1 T raw manuka honey (optional)

    Topping:

    • 1 cup tigernut flour

    • ⅔ cup arrowroot starch

    • 2 T raw coconut sugar

    • ¼ tsp cardamom

    • ¼ tsp nutmeg

    • 6 T cold grass fed butter or ghee (cubed) + extra for greasing

    • 1/2 cup chopped walnuts or pecans (toasted first!)

How you do it:

  1. Preheat oven to 350

  2. Grease your baking dish (use an 8x8 or a pie dish) with butter

  3. Add the filling to a large bowl and toss to combine, transfer to greased baking dish

  4. In a medium bowl, sift the flours, sugar and spices

  5. Add the butter and walnuts to the flour mixture and mix well with your hands until a crumbly dough forms

  6. Layer the crumble evenly over the filling and bake for 45 minutes or until crisp is bubbling

  7. Allow the crisp to sit for 10 minutes to cool before serving

Serve with organic vanilla ice cream
