Mediterranean Salsa
What you need:
5 radishes
1 green pepper
1 english cucumber
1 tomato
1/2 cup fresh parsley
1/4 cup fresh mint
1 juicy lemon
1 large clove of garlic
2 T olive oil
salt and pepper
blue corn/grain free/pita chips (Some of my favorite brands include: Thrive Blue Corn chips, Late July Grain Free chips, and Siete chips
How you do it:
Coarsely grate the radishes, mince the garlic
Finely dice pepper, cucumber, tomato; chop parsley and mint
Combine all veggies in a bowl and toss in juice of the lemon and olive oil; add salt and pepper to taste
Serve with chips and devour!
Tip: This is even tastier when made the day before and left to “marinate” overnight! Goes great as a salsa topper on chicken or fish!
Makes many servings!
