No Sugar Chocolate Zucchini Muffins
Makes 12 muffins
What You Need:
2 eggs-room temp
¼ c melted coconut oil
splash of vanilla
1 very ripe banana (~½ cup mashed)
1/2 cup of dairy free unsweetened milk
1 c cassava flour
½ c cacao powder
pinch of salt
1 tsp baking soda
1.5 c shredded zucchini (squeezed)
½ cup chocolate chips (for zero sugar I recommend 100% cacao Pascha chips)
Optional: ¼ cup raw/local honey
How You Do It:
Oven at 350
Line muffin tin with paper cups
Whisk together wet ingredients (eggs, oil, vanilla, mashed banana, milk)-add the honey here if using
In a large separate bowl, mix together the flour, cacao, salt and baking soda
Combine wet into dry and mix well, fold in zucchini and then chocolate chips (batter should thick like a brownie batter)
Scoop into muffin cups ~3/4 full
Bake for 20-25 minutes or until knife comes out clean
Let cool (optional: melt a few more chocolate chips with coconut oil and drizzle overtop)
Store in the fridge or freeze ‘em!
