No Sugar Chocolate Zucchini Muffins

These are a non-sweet, cake-like muffin!  They are super tasty for those of you who love a baked good but are avoiding added sugar and sweeteners! If you’re still getting accustomed to low/no sugar foods (we all struggle with this!) you can consider adding 85% or higher dark chocolate chips OR 1/4 cup of raw honey or maple syrup to the recipe to gently transition those tastebuds to less sugar!

Makes 12 muffins

What You Need:

  • 2 eggs-room temp

  • ¼ c melted coconut oil

  • splash of vanilla 

  • 1 very ripe banana (~½ cup mashed)

  • 1/2 cup of dairy free unsweetened milk

  • 1 c cassava flour

  • ½ c cacao powder

  • pinch of salt

  • 1 tsp baking soda

  • 1.5 c shredded zucchini (squeezed)

  • ½ cup chocolate chips (for zero sugar I recommend 100% cacao Pascha chips)

  • Optional: ¼ cup raw/local honey

How You Do It:

  1. Oven at 350

  2. Line muffin tin with paper cups

  3. Whisk together wet ingredients (eggs, oil, vanilla, mashed banana, milk)-add the honey here if using

  4. In a large separate bowl, mix together the flour, cacao, salt and baking soda

  5. Combine wet into dry and mix well, fold in zucchini and then chocolate chips (batter should thick like a brownie batter)

  6. Scoop into muffin cups ~3/4 full

  7. Bake for 20-25 minutes or until knife comes out clean

  8. Let cool (optional: melt a few more chocolate chips with coconut oil and drizzle overtop)

Store in the fridge or freeze ‘em!
