Fish Taco Bowls With Crispy Plantain Chips
Makes ~4 servings
What You Need:
Spicy Roasted Cod
1 # wild cod ->5% discount on my favorite place to get wild seafood-> Vital Choice!
1 tsp paprika
1/2 tsp garlic powder
generous pinch of cayenne
avocado oil
salt & pepper
How To: Turn oven on to 400, drizzle/spritz fish with a little oil; mix all spices in a small bowl & then rub all over the fish & place on baking sheet to roast for 10-12 min or until easily flakes with a fork
Cabbage Slaw
1/2 head purple cabbage
1/2 cup plain unsweetened dairy free yogurt (plain unsweetened)
juice of 1/2 juicy lime
1 T apple cider vinegar
How To: Slice cabbage thin and place into a large bowl with yogurt, lime juice, apple cider vinegar; toss to coat and let marinate for a few minutes or up to a few days in the fridge
Roasted Veggies:
1 large or 2 medium zucchini-cut into thick matchsticks
1 green bell pepper- sliced
1/2 yellow onion-sliced
2 tsp avocado oil
2 tsp cumin
dash of salt, pepper
How To: Preheat oven to 400, in a large bowl place chopped veggies and toss in avocado oil and the seasonings; roast on a baking sheet for 20-30 min or until very fork tender
Guacamole
2 avocados
1-2 T cilantro
2 T red onion
1 lime
salt
How To: Dice the red onion, juice the lime, chop cilantro and mash avocado-> add with all ingredients to a bowl and season to taste with salt
Plantain Chips
2 medium green plantains
avocado oil (spray works best)
salt
How To: Oven at 400, line a baking sheet with parchment; peel and slice plantains thin (w/ a knife or mandolin); spritz parchment with avocado oil and line slices on baking sheet in 1 layer, spritz with a little more oil and top with salt; bake for 10 minutes then flip chips/rotate pan; bake for an additional 8-10 or until golden and crispy!
White Rice
How To: Cook according to package instructions
Iceberg Lettuce
How To: Wash and chop
Salsa (I like this one)
How You Do It:
Build Your Bowls:
Lettuce on bottom + roasted veggies
Small scoop of white rice
Big scoop of cabbage slaw
Top with flaked pieces of fish
Layer some salsa overtop
Handful of plaintain chips + big spoonful of guacamole + extra limes!
Devour!
