Radicchio Salad w/ creamy lemon dressing & sourdough breadcrumbs

Radicchio Salad w/ lemon dressing & sourdough breadcrumbs

Makes side dish servings of salad for 3-4 people

What you need:

  • 1/2 head radicchio - sliced thin

  • 2 thick slices of Bread Srsly (gum free loaf) OR 1/4 cup store bought GF breadcrumbs

  • 1 T fresh or 1/2 T dried herbs of choice (I used fresh thyme and rosemary, use what you have!)

  • 1/2 cup raw walnuts

  • 1 juicy lemon (make sure organic!)

  • 1/4 cup grated pecorino

  • 1 tsp raw manuka honey

  • 1 tsp dijon mustard

  • 1 tsp minced or grated shallot

  • 1/4 cup + 2-3 T olive oil

  • salt and pepp

How you do it:

  • For the breadcrumbs:

    • Preheat oven to 400, cube the bread and toss it in 2-3T of olive oil + fresh herbs (chopped finely) + salt and pepper in a bowl then spread out in a baking sheet and place into the oven

    • Bake for 20 min or until golden and crispy

    • Blend in a vitamix or food processor until ground like breadcrumbs - ok if there are still some coarse pieces!

  • Toast walnuts in a pan on medium heat for 5-7 min until fragrant, set aside

  • Make the dressing:

    • Whisk together in a jar - the juice and zest of 1 lemon + pecorino + honey + shallot + 1/4 cup olive oil + pinch of salt and pepper each

  • Combine all in a big bowl:

    • Radicchio + breadcrumbs + walnuts + dressing, get in there with your (clean) hands and toss that puppy!

    • Serve alongside a protein and carb (goes well with lettuce wrap burgers and baked fries)
